Macaroni corn casserole takes classic mac and cheese to new heights by introducing sweet, juicy corn kernels into the mix. To take it up a notch, a buttery Ritz cracker crumble topping adds a crunchy golden crust, providing a satisfying contrast to the creamy interior.

This corn macaroni casserole is the ultimate comfort food that strikes the perfect balance between savory and sweet. This dish is perfect for a crowd, whether that be at a potluck, family gathering, or as a comforting weeknight dinner!

STEP ONE: Preheat your oven to 350°F and grease a 9×13″ baking dish — either butter or nonstick cooking spray will work.

STEP TWO: In a large mixing bowl, combine the uncooked elbow macaroni, cream-style corn, whole corn kernels (including the juice), diced Velveeta cheese, and shredded cheddar cheese. Thoroughly mix all these to create your cheesy base.

STEP THREE: Transfer the mixture to the prepared baking dish and sprinkle it on top of the diced butter stick, promoting a golden, flavorful crust.

STEP FOUR: Cover the baking dish securely with foil, then place in the oven and bake mac and cheese with corn for 20 minutes.

STEP FIVE: Meanwhile, melt the remaining 2 tablespoons of butter in a small bowl until it becomes a smooth liquid. Stir the crushed Ritz crackers into the melted butter, creating a buttery and crunchy topping for the macaroni and corn casserole.

STEP SIX: After 20 minutes of baking, remove the foil and stir the macaroni corn casserole.

STEP SEVEN: Sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the top of the macaroni and corn casserole. Then, generously sprinkle the butter and Ritz cracker crumb mixture over the cheese.

STEP EIGHT: Return the uncovered baking dish to the oven and continue baking the corn macaroni casserole for an additional 25 minutes, or until the cheese turns bubbly and golden brown.

Make a few simple swaps for a gluten free version of this recipe! Use your favorite GF pasta as long as it’s a small shape like elbow or penne noodles.

Then, replace the Ritz crackers with gluten-free breadcrumbs or crushed gluten-free crackers for the topping — or skip it altogether!

You can absolutely adapt the recipe to make macaroni and corn casserole in a slow cooker! Keep in mind that it won’t be completely hands-off, and it will take longer to cook. You will also have to make some adjustments to the crunchy cracker topping.

You can make a variation of macaroni corn casserole without creamed corn.

Instead, you can use whole corn kernels and add a combination of heavy cream, milk, or sour cream to achieve a creamy texture.
